The authentic taste of the Po Delta
Suspended between land and water, the Po Delta expresses its unique identity through its cuisine, where the flavours of the Adriatic Sea blend harmoniously with the produce of the Ferrara countryside. Eel, Manila clams, mussels, shrimp, sea bream, sole and sea bass are complemented by rice, radicchio, asparagus, pumpkin, mushrooms and truffles, creating an outstanding food and wine heritage. Many of these products have obtained PDO and PGI certifications and represent the authentic culinary traditions of Ferrara, Comacchio and the Po Delta Park.
During your stay, you can taste these local specialties in the area's traditional restaurants or take part in food and wine tastings organised by Po Delta Tourism during excursions, experiences, events and local festivals.
A true must-try is the delicious Comacchio eel, the queen of Delta cuisine, served grilled, in the traditional brodetto “a becco d’asino” fish stew, with cabbage, or as the star ingredient of refined risottos. Also worth tasting are the local Manila clams and mussels, served in a rich seafood broth or with pasta, mixed fried seafood from the sea and lagoon—perfect to enjoy aboard our motor vessels or after a boat or canoe excursion—along with grilled fish and the great classics of Ferrara’s culinary tradition, such as cappellacci stuffed with pumpkin and risotto prepared with radicchio or asparagus.
Complementing these dishes are the fragrant PDO Vini delle Sabbie—Fortana, Sauvignon, Bianco del Bosco and Merlot—produced in the sandy soils close to the Adriatic coast.
